This was the first time we tried ashgourd curry. Not sure what is the Indian name for ashgourd but it is the main ingredient used to make pethas. Just sharind the Ashgourd curry recipe out here-
You need 1/4th kg ashgourd. Peel the skin, wash it and cut into 1/2 inch long pieces. Either cook it with 2 cups water till it turns soft or else steam it in a pressure cooker. Drain the water and keep aside.
Next dry roast 1/4 th cup coconut till it turns golden brown. In an another pan add 1/2 tsp oil. Once its hot add 1/2 tspn each of sesame seeds, coriander seeds and methi/fenugreek seeds. Then add 2-3 red chillies i.e. as per your taste. Remove it from heat and add a small piece of tamarind and ginger.
Grind all the above ingredients along with roasted coconut into a fine paste.

Heat 1 tspn oil in a vessel and add 1 tspn cumin seeds and 4-5 curry leaves. After they splutter add a pinch of asafoetida. Next add the paste alongwith 1/2 tspn turmeric powder. Add salt as per taste. Cook for 3 minutes. Add 1 cup water and cook for another 3 minutes.
Next add the cooked ashgourd pieces and cook for another 10 minutes. Lastly add 1 tspn jaggery and cook for 1-2 minutes.
Garnish the ashgourd curry with coriander.
Your ashgourd curry is now ready. Serve it hot with rice or chappatis.
