Bharli Vangi- Maharashtrian Recipe

Bharli vangi i.e. brinjal filled with stuffing is one of my favorite dishes. Actually I do not like the taste of brinjals, except in 2 food items. First is bharli vangi and second is baingan bharta.

 

Bharli vangi

 

Today we will see how to cook bharli vangi.

 

You need 9-10 small dark purple brinjals. Wash them and slit into such a way that both the sides remain attached. Add a pinch of salt and turmeric inside every brinjal. 

 

Next in a pan add 1 tspn oil and fry 1/4 th cup coconut till golden brown. Add 1 tblspn. Coriander seeds and sesame seeds each. Add 1/2 inch piece of ginger.

 

Remove from heat and grind it into a thick paste. Fill in a spoonful of this paste into.each brinjal. 

 

Take another pan and add 2 tblspns oil. Add 1 tspn cumin seeds. After they splutter, add the brinjals. Fry for 2-4 minutes on each side. Next add 1/4 th cup water and let the brinjal cook.

 

After 10 minutes add tamrind jaggery paste to your bharli vangi. Let it cook for another 5-8 minutes. Remove from heat. Your bharli vangi is now ready.

 

Serve your bharli vangi with chappatis.
