Filipino Style Chicken Marengo

 

I have started cooking this Filipino Style Chicken Marengo (up to now) in the 90´s out of what I had in my kitchen cupboard and fridge that I did not even know how it was called until I came across of Chicken Marengo recipe online. I used to call this recipe Chicken in Tomato Sauce before. So this is my Filipino way of making chicken Marengo.

BTW, as what I have read in Wikipedia, Chicken Marengo was first made after Napoleon Bonaparte and his army won the Battle of Marengo in Italy against the Austrian army.

Filipino style Chicken Marengo is mostly served with boiled rice but sometimes I served it with peeled cooked potatoes or pasta and with side dishes like vegetable salad.

Other vegetables  you can use in case you don´t have or don´t like mushrooms:

  • Bell peppers
  • Aubergine or eggplant
  • Broccoli
  • String beans
  • Olives, black or green
  • Onions
  • Peas
  • Cauliflower

I have made this Filipino style chicken marengo with some Asian vegetables like Chayote when I was in my home country Philippines. Chayote is a kind of squash common in Asian countries. This vegetable is all year round in the Philippines but I can buy this in Asian shop in Germany  too whenever I need it. Though it´s a bit expensive but it is worth it.

Ingredients
  1. 2 chicken thighs with legs (cut into halves)
  2. 2-3 soy sauce
  3. 2 cloves garlic, crushed
  4. 1 small onion, diced
  5. 1 lime or 4 calamansi juice
  6. Vegetable oil for frying
  7. 1 can peeled tomatoes
  8. 1 tablespoon tomato paste
  9. 100 gram fresh champignon, sliced
  10. 1 stalk spring onion, sliced
  11. 1-2 tablespoon Thai Sweet Chili Sauce For Chicken
  12. Salt and pepper to taste
For the marinade
  1. Wash the chicken meat and pat dry with kitchen paper.
  2. Mix the garlic, soy sauce and lime or calamansi juice in a bowl and add the chicken meat. Mix well.
  3. Marinate for at least an hour. For best result, marinate the meat overnight.
For making the stew
  1. Heat the frying pan into medium heat and saute the diced onion.
  2. Fry the marinated chicken meat (include the garlic) until both sides are brown.
  3. Add the canned tomatoes and let the meat with tomatoes simmer until the meat is tender.
  4. Then add the fresh champignons and spring onions and stir them to the mixture.
  5. Then add the Thai sweet chili sauce, salt and pepper. Taste it. You can add more of these spices if you want.
  6. Serve with rice or cooked noodles.
  7. Enjoy your meal!
Tips
  1. 1. You can use canned champignon if you can´t buy fresh champignon in your area.
  2. 2. You can use lemon juice if you don´t have lime or calamansi juice.
  3. 3. You can buy a bottle of Philippines soy sauce with calamansi juice in it and it is handy for making the marinade.
  4. 4. Thai Sweet Chili Sauce for chicken and Philippines soy sauce with calamansi can be bought in an Asian shop.
