Now in pre-heated vegetable oil add crushed garlic, dry red chilies, split green chilies and ginger. Cook Until garlic get golden brown color. Cook on slow flame
When garlic change it’s color add mustard ,cumin seeds and coriander and Cook on slow flame until seeds pooping.
After seeds splutter add diced cut potatoes and onion in the wok. Same time add spices – turmeric, salt and red chili power and mix all ingredients together well.
Now cover the wok with lid and cook on slow flame for 5-10 minutes. After slow cooking check the potatoes if ready or not.
If potatoes cooked well o release it's raw texture , then now it's time to ready fresh cumin powder. In a pan roast about 2 tsp cumin seed . When seeds roasted well and starts releasing its sweet smell off the flame and crush the roasted seeds with rolling pin.
Now time to mix fresh cumin and raw mango powder in ready potatoes. Cook potatoes for 3-4 minutes on slow flame.
Then finally add ½ cup fresh chopped green coriander leaves in potatoes, mix well and again cook potatoes for 2 minutes. Off the flame and serve and garnish as you like
