Jersey Caprese Sandwiches
A delicious sandwich made with basil.

  1. 2 cups packed basil leaves, washed dried well
  2. 1 cup mayonnaise
  3. 2 Tablespoons, lemon juice plus zest, divided
  4. 2 Tablespoons roasted,salted, shelled pistachios
  5. 1 large or 2 small garlic cloves, roughly chopped
  6. Kosher salt/fresh finely grated black pepper
  7. 2 fresh long crusry Italian rolls or ciaatta rolls
  8. 2 ripe New Jersey tomatoes sliced thick, divided
  9. 1 (7 ounce) fresh mozzarella ball
  10. Sliced and divided arugula
  1. In a food processor, put on the blade attachment.
  2. The lemon juice, pistachios, garlic, mayonnaise, three turns of the pepper mill, and 1/2 teaspoon salt
  3. These ingredients should be smooth and well enough combined.
  4. Take out of the food processor.
  5. The lemon zest should be folded into the ingredients that were taken out of the food processor.
  6. Then it should be placed in a comtainer that is sealed tightly.
  7. Makes 1 1/4 cups with extrasto make more sandwiches.
  8. Both rolls should be sliced lengthwise down the center.
  9. On each half of the bread spread on the basil aioli.
  10. The tomato slices should be seasoned with with salt and pepper.
  11. On each roll slice overlap tomatoes.
  12. The mozzarella slices should be put over the tomatoes.
  13. The mozzarellawith freshly ground pepper.
  14. Using a generous portion of baby arugula put on the tomato
  15. Both sandwiches should be closed
  16. Both sandwiches should be sliced in half at the angle.
