Pineapple Bacon Upside Down Cake

Bacon Goes With Everything!
I’ve seen so many recipes and various uses for bacon that I wanted to invent something of my own. That’s how this project started.  My favorite pizza is pineapple and bacon, and I got to thinking that I would like the pineapple and bacon for dessert, you know something sweet. Then I just let my train of thought follow a path, so I decided to make a pineapple bacon upside down cake and of course bacon goes nicely with pineapple.  I was going to use maple smoked bacon but I thought that might be too much maple so I used maple syrup so that I could regulate the sweetness.

Pineapple Bacon Upside Down Cake

This recipe combines some of my favorite foods, pineapple, bacon and cake!

  1. 1 box cake mix, I used yellow
  2. 20 oz. can pineapple rings, drained
  3. 1 lb. bacon
  4. 4 Tblsp. maple syrup
  1. Prepare cake mix batter according to instructions on box. Set aside.
  2. Cook bacon until slightly crisp but still flexible. (it'll continue cooking in the oven) Drain bacon.
  3. Lightly grease 2 - 9 inch cake pans.
  4. Put a layer of pineapple rings in each pan. (use all the rings)
  5. Layer bacon on top of pineapple, dividing equally between both pans.
  6. Drizzle 2 Tblsp. maple syrup over bacon in each pan.
  7. Pour cake batter equally in each pan.
  8. Bake at 350 degrees for about 30 - 35 minutes or until toothpick inserted in center comes out clean.
  1. Each of the ingredients complement the others for a nice layer of flavors.
  2. I used a cake mix rather than making a cake from scratch and it turned out very well!
  3. You can also make this in one 13 x 9 inch pan or cupcakes. You’ll need to adjust the baking time for that.
