Buttermilk Powder…My Newest Obsession.

I was watching one of those cooking shows on TV (I don’t remember which one) and the cook used powdered buttermilk in his pancake recipe in place of liquid buttermilk.  In all the years that I have been cooking and baking, I have never heard of or seen buttermilk powder. 

Whenever I wanted to make a recipe that required buttermilk I always had to make a special trip to the store to buy the liquid in a quart carton, even if I only needed one cup. Then there was always the dilemma of what to do with the unused buttermilk, I’ll admit that most of the time it got poured down the drain after about a week or so.

I Bought it, Now What?

Well, the basic instructions are on the can, here is the short version of how to use it:

To make 1 cup of buttermilk - use 4 Tbsp. Buttermilk Powder and 1 cup water.
It’s that easy!

There is also a recipe for buttermilk pancakes on the can, that was the first recipe that I made with this powder and they turned out great.

Buttermilk powder can be used for any recipe that calls for buttermilk such as soups, casseroles, puddings, custards, cakes, cookies and lots more. My favorite is salad dressings. You can start with a yogurt or mayonnaise base, combine it with the buttermilk powder, then add fresh parsley, basil, minced garlic and chives for an herb dressing or you can make French dressing or Green Goddess, the possibilities are endless and it’s all done with a few tablespoons of this powder.  There is no waste and you won’t have all those bottles of salad dressing in the fridge, simply make the kind you want when you want!

How Long Will it Stay Fresh and Usable?

Good question. I ordered mine in May of 2014 and on the bottom of the can it reads: Best If Used By March 11, 2018. Four Years!! That’s a lot better than liquid buttermilk which as I already told you, gets poured down the drain within a week.

But, I wondered just how long it would last after the can was opened so I emailed the company and they answered back right away.  Here are the key points of their response: Once opened, Saco Buttermilk Powder should be stored in the refrigerator where it can last for several years.  If the product is still in powder form it is good to use.  If there are lumps that break up into powder, they are fine to use.  If the entire can has hardened, use a food processor to pulverize the product to powder.  The product would never be unsafe or harmful to use.  The product has an indefinite shelf life if it is stored in the refrigerator and free from moisture.  Some have found it helpful to put the entire container in a zip lock bag in the refrigerator.  This will keep moisture out but you will still have the information on the canister.

One can of Buttermilk Powder stored properly will stay fresh for years and you can use as much or as little as you need when you need it.
